Though his cellars lie in Flavigny—a village without vines—his family’s roots run deep in the Côte des Blancs, with heritage parcels in Cuis, Cramant, and the Sézannais. A self-taught innovator, Adrien draws inspiration from Burgundy’s finest, embracing organic farming, low yields, and meticulous barrel ageing. His vineyards are cultivated with living soils, high trellising for shade, and minimal intervention, eschewing synthetics in favour of seaweed treatments and rigorous canopy management. In the cellar, spontaneous fermentations, extended lees aging, and a judicious use of oak (25-33% new) lend his Champagnes a rare vinosity and complexity.
