Though his cellars lie in Flavigny—a village without vines—his family’s roots run deep in the Côte des Blancs, with heritage parcels in Cuis, Cramant, and the Sézannais. Since taking over the estate in 2012, Adrien has transformed Dhondt-Grellet into one of Champagne’s most sought-after names, crafting wines of extraordinary depth, texture, and terroir-driven intensity.
A self-taught innovator, Adrien draws inspiration from Burgundy’s finest, embracing organic farming, low yields, and meticulous barrel ageing. His vineyards are cultivated with living soils, high trellising for shade, and minimal intervention, eschewing synthetics in favour of seaweed treatments and rigorous canopy management. In the cellar, spontaneous fermentations, extended lees aging, and a judicious use of oak (25-33% new) lend his Champagnes a rare vinosity and complexity. With every vintage, Adrien Dhondt-Grellet reaffirms his place among Champagne’s most exciting vignerons, delivering fireworks from top to bottom.
