Frédéric Savart’s groundbreaking 2011 experiment—aging magnums "tiré liège" (under cork) for secondary fermentation—has yielded something extraordinary: a wine of staggering complexity, with layers of toasted brioche, dried cherry, and umami depth. The extended oxygen exposure creates a texture like liquid velvet, while 12 years on lees add mesmerizing savoriness.
Only 850 magnums exist. As Antonio Galloni noted of Savart’s later vintages, this is "captivating" Pinot Noir Champagne at its most profound. Decant if opening young.
