Si tu Sais, Chamilly
What began as a one-time harvest experience in Savigny-lès-Beaune turned into an obsession for Patrick Johnston and Sara Cunningham, who founded Si Tu Sais in 2020 as a tiny, terroir-driven micro-négoce. Working from Chamilly, they source pristine, biodynamic fruit from trusted growers to craft crystalline, tension-filled Burgundies—never more than 1,000 bottles per cuvée. Inspired by the likes of Vincent Dancer, their wines balance modern precision with soul: whole-bunch ferments (when stems are ripe), old barrels, and low-temperature maceration preserve purity and spice.
The name—"if you know, you know"—hints at their insider ethos. With just 25 barrels planned for 2023 and a focus on elite appellations, Si Tu Sais is already a cult in the making.
